Yield: = Two 9-inch layers, or three 8-inch layers.
Pre-heat oven and set at 375° F.
Line bottoms of two 9-inch or three 8-inch round layer cake pans with two layers of waxed paper.
Have all ingredients at room temperature.
Sift flour before measuring.
1/2 cup Swift'ning cups sifted cake flour 1 3/4 cups sugar 1 1/2 teaspoons soda.
1 teaspoon salt 1 teaspoon vanilla 1 cup sour milk* or buttermilk.
2 squares melted chocolate 2 eggs.
1/2 cup sour milk or buttermilk.
Place Swift'ning in bowl. Sift together flour, sugar, soda, and salt into bowl. Add vanilla and 1 cup sour milk. Beat 2 minutes on medium speed of electric mixer, or by hand using 150 strokes per minute. Throughout mixing time keep batter scraped from sides and bottom of bowl with rubber scraper. Scrape bowl and beaters.
Add Group II. Beat for 2 additional minutes. Scrape bowl and beaters. Pour equal amounts of batter into cake pans. Bake.
375° F.
30 minutes.
*To make 1 1/2 cups sour milk place 1 1/2 tablespoon vinegar in measuring cup and fill to 1/2 cup mark with sweet milk. Combine with 1 cup of sweet milk.
