Two 9-inch layers, or three 8-inch layers.
Pre-heat oven and set at 375° F.
Line bottoms of two 9-inch or three 8-inch round layer cake pans with two layers of waxed paper.
Have all ingredients at room temperature.
Sift flour before measuring.
1/2 cup Swift'ning.
1 1/2 cups sugar.
2 1/2 cups sifted cake flour.
2/3 cup milk.
4 teasoons double acting baking powder.
1 teaspoon vanilla 1 teaspoon salt.
4 egg whites 1/3 cup milk.
Place Swift'ning in bowl. Sift together flour, baking powder, salt and sugar into bowl. Add 2/3 cup milk and vanilla. Beat 2 minutes on medium speed of electric mixer, or by hand using 150 strokes per minute. Throughout mixing time keep batter scraped from sides and bottom of bowl with rubber scraper. Scrape bowl and beaters.
Add Group II—unbeaten egg whites and milk. Beat for 2 additional minutes. Scrape bowl and beaters. Pour equal amounts of batter into cake pans. Bake.
375° F.
About 28 minutes.
Quick Fudge Frosting or any other frosting.
