This is a very amusing salad to give, for if people are not told what it is, very few will guess that it consists of shredded uncooked turnip. It has quite a different flavour to cooked turnips, and even those who dislike turnips will think this delicious.
A bunch of young turnips, a French salad dressing.
Scrape and wash the turnips and shred them very finely. Put them on a plate and sprinkle freely with salt. Let them stand for about I hour, and drain off the water. Put them in a salad bowl, and pour over them a salad dressing of 3 tablespoons of oil to 1 1/2 of wine vinegar, well mixed, and seasoned with salt and pepper.
