9 x 5-inch loaf, 2 3/4-inches deep; 30 to 35 slices.
1/2 cup Swift'ning.
3/4 cup chopped, dried apricots * (3 1/2 ounces)
1/2 cup sugar 1 teaspoon salt 1 egg.
2 cups sifted flour.
3 teaspoons double acting baking powder.
3/4 cup milk.
1 cup chopped nut meats.
Wash apricots. Cover with hot water. Let stand 1/2 hour. Drain. Chop. Cream Swift'ning, sugar, and salt. Add egg, beating well. Sift flour with baking powder. Add alternately with milk. Stir only enough to blend ingredients. Add apricots and nut meats. Pour into waxed paper lined 9 x 5-inch loaf pan. Bake.
350° F.
About 1 hour.
*Any dried fruit may be used. Pasteurized dried fruit is soft and requires no soaking.
